Auricularia Auricula Extract, known as Jew’s ear, fungus, jelly ear or many other common names, is an edible Auriculariales fungus found worldwide. The fruiting body is characterized by its obvious ear shape and brown color. It grows on wood, especially old wood. Its specific name stems from the following belief: Judas Iscariot hanged from an old tree. The common name “Ear of Judas” was largely covered by the corrupt “Ear of Jews”, but now, “jelly ears” and other names are given priority. This fungus is found all year round in temperate regions of the world and grows on dead and live wood.

In the West, as early as the 19th century, A. auricula-judae was used in folk medicine to treat sore throats, eyes, jaundice, and astringency. Although it is not widely consumed in Western countries, it has long been popular in China, to the extent that Australia exported a lot of products to China in the early 20th century. Today, this fungus has become a popular ingredient in many Chinese dishes, such as hot and sour soup, and is also used in Chinese medicine. It is also used as a blood tonic in Ghana. Modern research on possible medical applications has drawn various conclusions that hornwort has anti-tumor, hypoglycemic, anticoagulant and cholesterol-lowering properties.
